We grow lots of different crops. Diversity is king on a sustainable farm. Not too much of our production is tied up in any one crop at one time. In addition to growing lots of kinds of crops, we often grow multiple varieties of each crop. This just adds to the diversity, and acts as crop insurance - some varieties will do better than others in different conditions, so we are more likely to have a successful harvest this way.
